It's never too early to start your seeds for the spring (it definitely can be too early). But regardless I find it's better to be too early than too late. Every year I end up not planning or starting early enough and then I'm rushed to have to go to the nursery and scrounge the mass-produced seedlings. Below is a list of seeds you can start in late winter, most being ones I am starting.
Broccoli
The main type of broccoli I am starting right now is a variety called Calabrese Broccoli; it is a fairly cold hearty variety and is a quick grower. If you're like me and live in an area that will go from cold to hot almost overnight, try to shoot for quick-to-mature varieties because broccoli will bolt as soon as it gets too warm.
You can choose between traditional-style broccoli (like Arcadia or De Cicco) or go for something for a pop of color like purple sprouting broccoli such as Purple Magic.
Onions
If you are starting your onions from bulbs like I have done in the past then maybe just ignore this section. Buttttt, if you are wanting to start your onions from seeds then I think it is a wonderful time to do so. Even if you think you are starting them too early, you can chop the tops off of your onions if they get too big to help them develop more robust roots before transplanting. Herbs
Herbs are a great seed to start this time of year because you can often just grow these in a sunny window indoors as well as outside. I recommend for people to start with herbs whenever they want to get into gardening because I find them to be the most useful and hearty plant. Homegrown herbs will spice up almost any dish you are already making.
Mint is my favorite herb to grow but you need to make sure to keep it contained in a pot or a divided area of your garden because it will TAKEOVER. Basil is also another great herb to grow, there are so many different slight variations of basil to experiment with to get a certain taste. Other great herbs may include: Parsley, Thyme, Dill, and
